I almost called this blog post: " When Beer Meets Food : Discover Tasty Beer Recipes." A nice title, but a bit long. There are plenty of beer recipes, but I've chosen to feature the ones I like the most!
Beer is often enjoyed as a refreshing and convivial beverage, but did you know that it can also be a delicious ingredient to enhance your dishes ?
I'm taking you on a journey to explore different cooking recipes that feature beer as a key ingredient . Get ready to discover new flavors and wow your guests with these delicious combinations. If you don't have a container or measuring cup to measure certain ingredients and quantities, you can easily use a beer mug .

Chicken in lager
Start with a classic and delicious recipe: chicken in lager. This recipe involves marinating chicken pieces . For your lager marinade, you will need these ingredients:
- 3 to 4 quarters of a garlic clove
- The juice of one lemon
- Fresh herbs: coriander, chives and dill
- 1 bottle of 25 cl blond beer
Allow 150-200g of chicken per person. Personally, I only use chicken breast, but you can also marinate thighs and after-thighs. Leave to marinate for 1 to 2 hours at room temperature , just enough time to drink a nice mug of beer!
Chef's tip: Pierce your chicken pieces with a fork in lots of places. This will allow the marinade to penetrate the flesh !
After marinating, bake the chicken in the oven at 180°C for 45 minutes, covering the dish with aluminum foil. You'll get tender, juicy meat with a subtle beer flavor. If you'd like it to crisp up, finish cooking it on the grill for 5 minutes, removing the foil.
Beef stew with dark beer
For comfort food lovers , try a delicious beef stew with stout beer. In this recipe, brown chunks of beef in a casserole dish with vegetables, spices, and stout beer. Feel free to use a beer glass to measure the amount. Here's what I recommend for 4 people:
- 300 g of carrots cut into slices
- 600g sliced potatoes
- 200 g chopped onions
- 300 g of sliced zucchini
- 500g of beef cheek (or oxtail, it’s cheaper but not as good!)
- 1 liter of dark beer
- 1 stock cube
Simmer slowly over low heat for at least 2 hours until the meat is tender and the flavors blend harmoniously. As with all slow-cooked dishes, the longer it's heated, the better. During the last half hour, uncover your pot/casserole so the juices can reduce and concentrate.
If you're a sweet and sour person, you can add 150-200g of dates . They'll swell and fill with juice, their natural sugar will blend into the sauce for pure bliss. Personally, I love it!
Beer Pancakes
Beer can also be used to make light and fluffy crepes. Replace some of the milk in your traditional crepe recipe with lager or amber beer. Personally, I opt for a 50/50 mix of beer and milk. The beer will add a fluffy texture and subtle flavor to the crepes.
List of ingredients for 10 to 12 pancakes:
- 250 g of flour
- 2 eggs
- 25 cl of milk
- 25 cl of amber or blond beer
- 50 g melted butter
- 1 pinch of salt
- 1 tablespoon of sugar (optional)
In a large bowl, sift the flour and add the salt (and possibly the sugar). Make a well in the center of the flour to crack the eggs into . Mix gently, incorporating the flour into the eggs to avoid lumps. Once the mixture is ready, gradually pour in the milk and beer while continuing to mix.
Once the batter is smooth, add the melted butter and mix again. Let it rest for 30 minutes at room temperature ; this will allow the flour to hydrate and your pancakes will be lighter and airier.
Pair them with maple syrup , fresh fruit, or whipped cream for a delicious breakfast or brunch. Alternatively, you can always use jam or Nutella, but the powerful flavor of these spreads will make beer pancakes take second place.
Beer cheese fondue, Savoyard fondue revisited
The combination of melted cheese and beer is a real treat . Prepare a classic cheese fondue by adding lager or brown beer to your cheese mixture, just as you might have added white wine.
As a reminder, here are the traditional cheeses used in fondue:
- Beaufort: Beaufort is a hard, cooked cheese made from cow's milk. It adds a rich, fruity flavor to Savoyard fondue.
- Comté: Comté is also a hard, cooked cheese made from cow's milk. It is characterized by its delicate, slightly nutty flavor, making it an excellent choice for fondue.
- Emmental: Emmental is a Swiss hard-cooked cheese, recognizable by its characteristic holes. It adds a melting texture and mild flavor to fondue.
Add garlic, spices, or herbs to enhance the flavor if desired. Serve the fondue with pieces of bread, crunchy vegetables, or cold cuts for a convivial dining experience .
Regarding the quantity of beer, I would advise you to pour between half of a 25 cl beer or the whole bottle depending on the quantity of cheese.
Chocolate Beer Cake
For dessert lovers, try a chocolate beer cake! This recipe combines the richness of chocolate with the subtle flavor of dark beer . Use dark beer in the cake batter and make a creamy chocolate frosting to top it. This moist and flavorful cake will delight the taste buds of chocolate lovers...and beer lovers!
List of ingredients:
- 25 cl of dark beer or a good stout
- 250 g of butter
- 400 g of sugar
- 75 g cocoa powder
- 15 cl of thick crème fraîche
- 2 eggs
- 1 tablespoon vanilla extract
- 250 g of flour
- 2 teaspoons of baking powder (or bicarbonate)
- ½ teaspoon of salt
Preheat your oven to 180°C (gas mark 6). Butter and flour your cake tin. In a saucepan, heat the beer and butter over low heat until the butter has completely melted. Remove from the heat.
Add the cocoa powder and sugar and mix until smooth . In a separate bowl, combine the cream, eggs, and vanilla extract and stir everything into your saucepan. Mix well.
Separately, mix your flour, yeast and salt then add everything to your saucepan until you obtain a smooth dough . All you have to do is pour it into your mold and bake for about 45 minutes. Use the tip of a knife to test the cooking of the chocolate cake. Don't forget to enjoy!
